Grilled Chicken Margherita

All the fresh flavors of a Margherita pizza on a tender, grilled chicken breast. This dish is topped with melted mozzarella, basil pesto, and a fresh tomato-basil topping.

Ingredients

  • 2 boneless, skinless chicken breasts, pounded thin
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 2 slices mozzarella cheese
  • 1/4 cup (60g) basil pesto
  • 1/4 cup (40g) cherry tomatoes, halved
  • 1/2 tbsp fresh lemon juice
  • 1/4 cup (10g) packed basil leaves, thinly sliced
  • Salt and cracked black pepper to taste

Instructions

  1. In a bowl, toss the chicken with olive oil, garlic powder, Italian seasoning, salt, and pepper.
  2. Preheat a grill to medium-high heat. Grill the chicken for 6-8 minutes on each side, or until fully cooked (165°F / 75°C).
  3. In the last minute of cooking, top each chicken breast with a slice of mozzarella cheese and let it melt.
  4. Meanwhile, in a separate bowl, prepare the topping by gently tossing the halved cherry tomatoes, fresh lemon juice, and sliced basil.
  5. To serve, spread basil pesto over each chicken breast and top with the fresh tomato mixture.
