Grilled Chicken Margherita
All the fresh flavors of a Margherita pizza on a tender, grilled chicken breast. This dish is topped with melted mozzarella, basil pesto, and a fresh tomato-basil topping.
Ingredients
- 2 boneless, skinless chicken breasts, pounded thin
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 2 slices mozzarella cheese
- 1/4 cup (60g) basil pesto
- 1/4 cup (40g) cherry tomatoes, halved
- 1/2 tbsp fresh lemon juice
- 1/4 cup (10g) packed basil leaves, thinly sliced
- Salt and cracked black pepper to taste
Instructions
- In a bowl, toss the chicken with olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Preheat a grill to medium-high heat. Grill the chicken for 6-8 minutes on each side, or until fully cooked (165°F / 75°C).
- In the last minute of cooking, top each chicken breast with a slice of mozzarella cheese and let it melt.
- Meanwhile, in a separate bowl, prepare the topping by gently tossing the halved cherry tomatoes, fresh lemon juice, and sliced basil.
- To serve, spread basil pesto over each chicken breast and top with the fresh tomato mixture.
