Tuscan-Style Bowtie Pasta Salad

A vibrant and flavorful pasta salad inspired by the tastes of Tuscany, featuring bowtie pasta, sun-dried tomatoes, olives, and fresh spinach in a simple herb vinaigrette.

Ingredients

For the Salad:

  • 8 oz (225g) bowtie pasta
  • 3.5 oz (100g) jar sun-dried tomatoes in oil, drained and chopped
  • 3.25 oz (90g) can sliced olives, drained
  • 1/2 cup (15g) fresh spinach
  • 2 tbsp chopped basil
  • 1/4 cup (25g) grated Parmesan cheese

For the Dressing:

  • 6 tbsp olive oil
  • 1 tbsp white vinegar
  • 1 tbsp water
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Black pepper to taste

Instructions

  1. Cook the pasta according to package directions. Drain and rinse with cold water to cool.
  2. In a large bowl, combine the cooled pasta with the sun-dried tomatoes, olives, spinach, and basil.
  3. In a small jar, make the dressing by combining all dressing ingredients. Shake well to emulsify.
  4. Pour the dressing over the pasta salad and toss gently to coat.
  5. Stir in the grated cheese before serving.
