Creamy Gnocchi with Bacon and Spinach

A decadent and comforting one-pan meal, this recipe features soft potato gnocchi, crispy bacon, and fresh spinach all tossed in a rich and creamy Parmesan sauce.

Ingredients

  • 1 lb (500g) gnocchi
  • 5 oz (150g) bacon, chopped
  • 7 oz (200g) fresh spinach
  • 1 cup (240ml) heavy cream
  • 1/2 cup (50g) grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the gnocchi in a large pot of salted water until they float to the surface. Drain.
  2. In a large pan, cook the chopped bacon over medium heat until crispy.
  3. Add the cooked gnocchi to the pan with the bacon, tossing together.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and cook until the sauce thickens slightly, 3-4 minutes. Season with salt and pepper.
  5. Add the fresh spinach and cook until wilted, about 2-3 minutes. Serve immediately.
