Creamy Gnocchi with Bacon and Spinach
A decadent and comforting one-pan meal, this recipe features soft potato gnocchi, crispy bacon, and fresh spinach all tossed in a rich and creamy Parmesan sauce.
Ingredients
- 1 lb (500g) gnocchi
- 5 oz (150g) bacon, chopped
- 7 oz (200g) fresh spinach
- 1 cup (240ml) heavy cream
- 1/2 cup (50g) grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the gnocchi in a large pot of salted water until they float to the surface. Drain.
- In a large pan, cook the chopped bacon over medium heat until crispy.
- Add the cooked gnocchi to the pan with the bacon, tossing together.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and cook until the sauce thickens slightly, 3-4 minutes. Season with salt and pepper.
- Add the fresh spinach and cook until wilted, about 2-3 minutes. Serve immediately.
