Grilled Chicken with Roasted Potatoes and Arugula Salad

Ingredients

For the Chicken & Potatoes:

  • 1 chicken breast
  • 2 tbsp olive oil
  • 1/2 tsp paprika, garlic powder, dried oregano
  • 9 oz (250g) baby potatoes, halved
  • 1/2 tsp dried rosemary or thyme
  • Salt and pepper

For the Salad:

  • 1 cup (30g) arugula
  • 1/2 cup (75g) grapes
  • 1/4 cup (30g) hazelnuts
  • 1/2 cup (75g) mozzarella balls
  • 1/2 tbsp balsamic vinegar

Instructions

  1. Preheat oven to 400°F (200°C). Toss the potatoes with 1 tbsp olive oil, salt, pepper, and rosemary. Roast for 25-30 minutes.
  2. Marinate the chicken with 1 tbsp olive oil, salt, pepper, paprika, garlic powder, and oregano.
  3. Grill the chicken on a hot grill pan for 5-7 minutes per side, or until fully cooked (165°F / 75°C).
  4. In a bowl, combine the salad ingredients: arugula, grapes, hazelnuts, and mozzarella. Drizzle with olive oil and balsamic vinegar.
  5. Serve the grilled chicken with the roasted potatoes and fresh salad.
