Grilled Chicken with Roasted Potatoes and Arugula Salad
A complete, balanced, and delicious meal featuring a juicy grilled chicken breast, crispy roasted potatoes, and a fresh arugula salad with grapes, hazelnuts, and mozzarella.
Ingredients
For the Chicken & Potatoes:
- 1 chicken breast
- 2 tbsp olive oil
- 1/2 tsp paprika, garlic powder, dried oregano
- 9 oz (250g) baby potatoes, halved
- 1/2 tsp dried rosemary or thyme
- Salt and pepper
For the Salad:
- 1 cup (30g) arugula
- 1/2 cup (75g) grapes
- 1/4 cup (30g) hazelnuts
- 1/2 cup (75g) mozzarella balls
- 1/2 tbsp balsamic vinegar
Instructions
- Preheat oven to 400°F (200°C). Toss the potatoes with 1 tbsp olive oil, salt, pepper, and rosemary. Roast for 25-30 minutes.
- Marinate the chicken with 1 tbsp olive oil, salt, pepper, paprika, garlic powder, and oregano.
- Grill the chicken on a hot grill pan for 5-7 minutes per side, or until fully cooked (165°F / 75°C).
- In a bowl, combine the salad ingredients: arugula, grapes, hazelnuts, and mozzarella. Drizzle with olive oil and balsamic vinegar.
- Serve the grilled chicken with the roasted potatoes and fresh salad.
