Creamy Sausage and Gnocchi Skillet

A cozy and comforting one-skillet meal, this dish combines pillowy potato gnocchi with savory Italian sausage in a uniquely creamy butternut squash and thyme sauce.

Ingredients

  • 6 oz (170g) Italian sausage, sliced
  • 1/2 tbsp olive oil
  • 5 oz (140g) potato gnocchi
  • 1/2 cup (120ml) heavy cream
  • 1/4 cup (60ml) chicken broth
  • 1/2 cup (120g) butternut squash puree
  • 1-2 cloves garlic, minced
  • 1 tbsp thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Brown the sausage slices for about 4-5 minutes.
  2. Add the uncooked gnocchi, heavy cream, and chicken broth to the skillet. Bring to a simmer, cover, and cook for 5 minutes.
  3. Stir in the butternut squash puree and minced garlic. Continue to cook for about 3 minutes until the gnocchi are tender and the sauce has thickened.
  4. Remove from heat and stir in the thyme. Season with salt and pepper to taste.
