Hearty Beef and Bean Chili

A classic, hearty chili that's perfect for a cozy night in. This recipe features ground beef and kidney beans simmered in a savory, spiced tomato sauce.

Ingredients

  • 1 tbsp vegetable oil
  • 1 lb (450g) ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz / 400g) diced tomatoes
  • 1 can (14 oz / 400g) kidney beans, drained and rinsed
  • 1 tbsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, green onions

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté the onion and garlic for 2-3 minutes until softened.
  2. Add the ground beef to the pot. Cook, breaking it apart, until it's browned. Drain excess fat.
  3. Stir in the chili powder and cumin and cook for 1 minute until fragrant.
  4. Add the diced tomatoes (with their juice) and the drained kidney beans. Stir well.
  5. Season with salt and pepper. Reduce the heat to low, cover, and let the chili simmer for at least 15-20 minutes to allow the flavors to meld.
  6. Serve hot with your favorite toppings.
