Refreshing Cucumber Cream Cheese Rolls

A light, crisp, and refreshing appetizer or snack. Thin ribbons of cucumber are spread with cream cheese, filled with julienned vegetables, and rolled into beautiful, bite-sized spirals.

Ingredients

  • 1-2 large cucumbers
  • 1 package (8 oz / 225g) cream cheese, softened
  • 1 carrot, julienned
  • 1 bell pepper (any color), thinly sliced
  • 1/4 cup (10g) alfalfa sprouts or microgreens
  • Chopped chives or green onions, for garnish

Instructions

  1. Create cucumber ribbons by peeling long, thin strips from the cucumbers using a vegetable peeler. Lay them flat on a paper towel to absorb excess moisture.
  2. Spread a layer of cream cheese along the length of each cucumber strip.
  3. Place a few strips of carrot and bell pepper on top of the cream cheese.
  4. Carefully roll up each cucumber strip into a tight spiral.
  5. Top each roll with a small amount of alfalfa sprouts and garnish with chopped chives. Serve immediately.
