Honey Soy Roasted Salmon and Veggies
A healthy and delicious one-pan meal, this recipe features a salmon fillet roasted alongside broccoli and carrots, all coated in a sweet and savory honey-soy glaze.
Ingredients
For the Honey Soy Marinade:
- 1 tbsp soy sauce
- 1/2 tbsp raw honey
- 1 tsp grated ginger
- 1 tsp sesame oil or avocado oil
- 1/4 tsp pepper
For the Salmon and Veggies:
- 7 oz (200g) skinless salmon fillet
- 2 cups (170g) broccoli florets
- 1 cup (120g) sliced carrots
- 1 tsp avocado oil or olive oil
- Sea salt and black pepper to taste
- 1 tsp sesame seeds, for garnish
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small jar, combine all marinade ingredients. Shake vigorously to emulsify.
- On the baking sheet, toss the broccoli and carrots with olive oil, salt, and pepper.
- Place the salmon fillet among the vegetables. Pour the honey-soy marinade evenly over the salmon and veggies.
- Roast for 12-15 minutes, or until the salmon is flaky and cooked through and the vegetables are tender.
- Sprinkle with sesame seeds before serving.
