Honey Soy Roasted Salmon and Veggies

A healthy and delicious one-pan meal, this recipe features a salmon fillet roasted alongside broccoli and carrots, all coated in a sweet and savory honey-soy glaze.

Ingredients

For the Honey Soy Marinade:

  • 1 tbsp soy sauce
  • 1/2 tbsp raw honey
  • 1 tsp grated ginger
  • 1 tsp sesame oil or avocado oil
  • 1/4 tsp pepper

For the Salmon and Veggies:

  • 7 oz (200g) skinless salmon fillet
  • 2 cups (170g) broccoli florets
  • 1 cup (120g) sliced carrots
  • 1 tsp avocado oil or olive oil
  • Sea salt and black pepper to taste
  • 1 tsp sesame seeds, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small jar, combine all marinade ingredients. Shake vigorously to emulsify.
  3. On the baking sheet, toss the broccoli and carrots with olive oil, salt, and pepper.
  4. Place the salmon fillet among the vegetables. Pour the honey-soy marinade evenly over the salmon and veggies.
  5. Roast for 12-15 minutes, or until the salmon is flaky and cooked through and the vegetables are tender.
  6. Sprinkle with sesame seeds before serving.
