Easy Lemon Herb Grilled Chicken Skewers

Perfect for grilling or pan-searing, these chicken skewers are marinated in a simple yet flavorful blend of lemon juice, garlic, and oregano for a tender, juicy bite.

Ingredients

  • 1/2 lb (225g) boneless, skinless chicken breasts, cut into 1-inch (2.5cm) cubes
  • 1/4 cup (60ml) olive oil
  • 1 garlic clove, minced
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a mixing bowl, whisk together the marinade: olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper.
  2. Add the chicken cubes to the bowl and toss to coat evenly. Let it marinate for at least 30 minutes.
  3. Preheat a grill or grill pan to medium-high heat.
  4. Thread the chicken cubes onto the soaked wooden skewers.
  5. Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through (165°F / 75°C) and lightly charred on all sides.
