Easy Lemon Herb Grilled Chicken Skewers
Perfect for grilling or pan-searing, these chicken skewers are marinated in a simple yet flavorful blend of lemon juice, garlic, and oregano for a tender, juicy bite.
Ingredients
- 1/2 lb (225g) boneless, skinless chicken breasts, cut into 1-inch (2.5cm) cubes
- 1/4 cup (60ml) olive oil
- 1 garlic clove, minced
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a mixing bowl, whisk together the marinade: olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper.
- Add the chicken cubes to the bowl and toss to coat evenly. Let it marinate for at least 30 minutes.
- Preheat a grill or grill pan to medium-high heat.
- Thread the chicken cubes onto the soaked wooden skewers.
- Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through (165°F / 75°C) and lightly charred on all sides.
