Grilled Halloumi with Mango-Avocado Salsa

A perfect combination of salty and sweet, this dish features beautifully pan-grilled halloumi cheese served with a vibrant, refreshing salsa of mango and avocado.

Ingredients

For the Grilled Halloumi:

  • 8 oz (225g) block of halloumi cheese, sliced
  • 1 tbsp extra virgin olive oil
  • Black pepper to taste

For the Mango-Avocado Salsa:

  • 1/2 large mango, peeled and diced
  • 1/4 cup (40g) chopped red bell pepper
  • 1/2 large avocado, peeled and diced
  • 1/2 tbsp fresh lime juice
  • 1/2 tbsp olive oil

Instructions

  1. In a medium bowl, gently combine all the salsa ingredients: diced mango, bell pepper, avocado, lime juice, and olive oil. Set aside.
  2. Heat a grill pan or skillet over high heat.
  3. Brush the halloumi slices with olive oil and season with freshly ground pepper.
  4. Grill the cheese for 1-2 minutes on each side, until it has nice golden grill marks and is softened.
  5. Serve the warm grilled halloumi immediately, topped with a generous spoonful of the mango-avocado salsa.
