Grilled Halloumi with Mango-Avocado Salsa
A perfect combination of salty and sweet, this dish features beautifully pan-grilled halloumi cheese served with a vibrant, refreshing salsa of mango and avocado.
Ingredients
For the Grilled Halloumi:
- 8 oz (225g) block of halloumi cheese, sliced
- 1 tbsp extra virgin olive oil
- Black pepper to taste
For the Mango-Avocado Salsa:
- 1/2 large mango, peeled and diced
- 1/4 cup (40g) chopped red bell pepper
- 1/2 large avocado, peeled and diced
- 1/2 tbsp fresh lime juice
- 1/2 tbsp olive oil
Instructions
- In a medium bowl, gently combine all the salsa ingredients: diced mango, bell pepper, avocado, lime juice, and olive oil. Set aside.
- Heat a grill pan or skillet over high heat.
- Brush the halloumi slices with olive oil and season with freshly ground pepper.
- Grill the cheese for 1-2 minutes on each side, until it has nice golden grill marks and is softened.
- Serve the warm grilled halloumi immediately, topped with a generous spoonful of the mango-avocado salsa.
