Spinach and Feta Stuffed Chicken Breast

Ingredients

  • 1 boneless, skinless chicken breast
  • 1 cup (30g) fresh spinach leaves
  • 1/2 cup (60g) crumbled feta cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 tbsp olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the chicken breast by slicing it horizontally through the middle, but not all the way through, so you can open it like a book.
  3. In a bowl, mix the filling: spinach, crumbled feta, minced garlic, salt, and pepper.
  4. Stuff the chicken breast with the spinach and feta mixture and secure with toothpicks if needed.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 2-3 minutes on each side until golden.
  6. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is cooked through (165°F / 75°C).
