Spinach and Feta Stuffed Chicken Breast

Ingredients
- 1 boneless, skinless chicken breast
- 1 cup (30g) fresh spinach leaves
- 1/2 cup (60g) crumbled feta cheese
- 1 clove garlic, minced
- Salt and pepper to taste
- 1 tbsp olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly the chicken breast by slicing it horizontally through the middle, but not all the way through, so you can open it like a book.
- In a bowl, mix the filling: spinach, crumbled feta, minced garlic, salt, and pepper.
- Stuff the chicken breast with the spinach and feta mixture and secure with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 2-3 minutes on each side until golden.
- Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is cooked through (165°F / 75°C).
