Halloween Jack-O'-Lantern Stuffed Peppers

A fun and festive Halloween dinner, these bell peppers are carved with jack-o'-lantern faces, stuffed with a savory ground beef mixture, and baked until tender.

Ingredients

  • 2 large bell peppers (orange or yellow)
  • 1/2 lb (250g) ground beef
  • 1 onion, finely chopped
  • 1/2 can (7 oz / 200g) diced tomatoes
  • 1/2 cup (55g) shredded cheddar cheese
  • 1 tbsp olive oil
  • 1 tsp paprika & 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Cut the tops off the bell peppers and remove the seeds. Carefully carve spooky faces into the peppers with a small knife.
  3. In a pan, cook the filling. Sauté the onion in olive oil, then add the ground beef and cook until browned. Drain fat.
  4. Stir in the diced tomatoes, paprika, and cumin. Season and simmer for 5-10 minutes.
  5. Spoon the beef mixture into the hollowed-out peppers. Top with shredded cheese.
  6. Place the peppers in a baking dish, cover with foil, and bake for 30-35 minutes, until tender. Remove foil for the last 10 minutes to brown the cheese.
