Halloween Jack-O'-Lantern Stuffed Peppers
A fun and festive Halloween dinner, these bell peppers are carved with jack-o'-lantern faces, stuffed with a savory ground beef mixture, and baked until tender.
Ingredients
- 2 large bell peppers (orange or yellow)
- 1/2 lb (250g) ground beef
- 1 onion, finely chopped
- 1/2 can (7 oz / 200g) diced tomatoes
- 1/2 cup (55g) shredded cheddar cheese
- 1 tbsp olive oil
- 1 tsp paprika & 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (180°C).
- Cut the tops off the bell peppers and remove the seeds. Carefully carve spooky faces into the peppers with a small knife.
- In a pan, cook the filling. Sauté the onion in olive oil, then add the ground beef and cook until browned. Drain fat.
- Stir in the diced tomatoes, paprika, and cumin. Season and simmer for 5-10 minutes.
- Spoon the beef mixture into the hollowed-out peppers. Top with shredded cheese.
- Place the peppers in a baking dish, cover with foil, and bake for 30-35 minutes, until tender. Remove foil for the last 10 minutes to brown the cheese.
