Witches' Hair Pasta (Pumpkin Mac and Cheese)
A perfect, spooky meal for Halloween! This dish features black squid ink pasta ('witches' hair') tossed in a creamy pumpkin and cheddar cheese sauce, served with ghoulish deviled eggs.
Ingredients
- 14 oz (400g) black spaghetti (squid ink pasta)
- 1 cup (240g) pumpkin puree
- 1 cup (100g) grated cheddar cheese
- 1/2 cup (120ml) cream or milk
- 3 hard-boiled eggs for 'rotten' eggs
- 1 avocado & 1 tbsp mayonnaise for filling
Instructions
- Cook the black spaghetti in salted water until al dente. Drain.
- In a saucepan, make the sauce by combining pumpkin puree, grated cheddar, and cream. Heat on medium until smooth and creamy. Season with salt and pepper.
- For the spooky eggs: gently crack the shells of the hard-boiled eggs. Soak them in water with black food coloring for 1-2 hours to create a webbed pattern. Peel and halve them.
- Mash the egg yolks with 1 mashed avocado and mayonnaise. Season and refill the egg whites.
- Plate the black spaghetti, pour the pumpkin-cheddar sauce over the top, and serve with the spooky eggs.
