One-Pot Curry Chicken and Rice
The ultimate easy weeknight dinner, this one-pot recipe cooks chicken, rice, and fresh vegetables together in a fragrant and creamy coconut curry sauce for minimal cleanup.
Ingredients
- 1 tbsp olive oil
- 1 chicken breast, diced
- 1 cup (150g) cherry tomatoes, halved
- 1 red bell pepper, sliced
- 1 cup (185g) rice
- 1 tbsp curry powder
- 1 can (13.5 oz / 400ml) coconut milk
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot. Sauté the diced chicken for 5-7 minutes.
- Add the tomatoes and bell peppers, and stir for 2-3 minutes.
- Stir in the rice and curry powder, then pour in the coconut milk.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Season with salt and pepper before serving.
