Peanut Butter Glazed Tofu with Mango Salsa
A vibrant vegan dish where baked tofu is coated in a savory peanut butter glaze, served with crispy toasted rice and a sweet and spicy mango salsa.
Ingredients
For the Peanut Butter Tofu:
- 1 block (14 oz / 400g) tofu, diced
- 1/4 cup (40g) peanuts, finely chopped
- 4 tbsp soy sauce
- 1 tsp garlic powder
- 1.5 tbsp cornstarch
- 1 tbsp maple syrup
- 2 tbsp (30g) creamy peanut butter
- Juice of 1 lemon
For the Toasted Rice & Salsa:
- 1 cup (200g) rice
- 1 tbsp coconut oil
- 2 tsp turmeric
- 1 ripe mango, diced
- 1/2 red onion, diced
- 1/2 red bell pepper, diced
- 1 tomato, diced
- 4-5 pickled jalapenos, chopped
Instructions
- Preheat oven to 350°F (180°C). In a bowl, prepare the marinade by mixing peanuts, soy sauce, garlic powder, cornstarch, maple syrup, peanut butter, and lemon juice.
- Coat the diced tofu in the marinade, then spread on a lined baking tray. Bake for about 20 minutes.
- Cook the rice in salted water until tender, then drain. Heat coconut oil in a pan, add the rice, turmeric, salt, and pepper. Toast the rice over high heat until it starts to crisp up.
- In a bowl, combine the salsa ingredients: mango, onion, bell pepper, tomato, and jalapenos. Mix with lemon juice, salt, and pepper.
- Serve the baked tofu over the toasted rice, topped with the fresh mango salsa.
