Spinach and Ricotta Tortellini with Simple Tomato Sauce
A quick and comforting meal perfect for any weeknight. This recipe tosses tender spinach and ricotta tortellini in a simple, flavorful tomato and basil sauce.
Ingredients
- 1 lb (450g) spinach and ricotta tortellini
- 1 1/4 cups (300ml) passata or tomato sauce
- Fresh basil leaves
- 1 tbsp butter
- 1/4 tsp salt & pepper
- Grated Grana Padano or Parmesan cheese, to serve
Instructions
- Cook the tortellini according to the package instructions. Drain well.
- In a skillet, melt the butter over medium heat. Add the cooked tortellini and gently toss to coat.
- Pour the passata sauce over the tortellini. Season with salt, pepper, and fresh basil.
- Allow it to simmer gently for 2-3 minutes to heat through.
- Serve immediately, topped with grated cheese.
