Spinach and Ricotta Tortellini with Simple Tomato Sauce

A quick and comforting meal perfect for any weeknight. This recipe tosses tender spinach and ricotta tortellini in a simple, flavorful tomato and basil sauce.

Ingredients

  • 1 lb (450g) spinach and ricotta tortellini
  • 1 1/4 cups (300ml) passata or tomato sauce
  • Fresh basil leaves
  • 1 tbsp butter
  • 1/4 tsp salt & pepper
  • Grated Grana Padano or Parmesan cheese, to serve

Instructions

  1. Cook the tortellini according to the package instructions. Drain well.
  2. In a skillet, melt the butter over medium heat. Add the cooked tortellini and gently toss to coat.
  3. Pour the passata sauce over the tortellini. Season with salt, pepper, and fresh basil.
  4. Allow it to simmer gently for 2-3 minutes to heat through.
  5. Serve immediately, topped with grated cheese.
