Seared Salmon and Avocado Salad with Sriracha Dressing

A healthy and satisfying salad featuring perfectly seared salmon cubes, quinoa, creamy avocado, and a vibrant sriracha-honey dressing for a spicy-sweet kick.

Ingredients

For the Salad:

  • 1/2 cup (100g) quinoa and brown rice mix
  • 1/2 lb (200g) salmon, cubed
  • 1/2 cucumber, grated
  • 1 carrot, grated
  • 1 avocado, diced
  • 2 cups (50g) baby spinach

For the Dressing:

  • 1 tbsp sriracha sauce
  • Juice of 1 lemon
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 tbsp white sesame seeds
  • 1 tbsp black sesame seeds
  • Salt and pepper

Instructions

  1. Cook the quinoa/rice mix according to package directions. Let it cool.
  2. Season the salmon cubes with salt, pepper, and lemon juice. Sear the salmon in a hot pan with oil for 2-3 minutes until golden brown.
  3. In a large bowl, combine the cooled quinoa, grated cucumber and carrots, diced avocado, and baby spinach.
  4. In a small bowl, whisk together all dressing ingredients.
  5. Assemble the salad by topping the quinoa-vegetable mix with the seared salmon cubes and drizzling with the dressing.
