Seared Salmon and Avocado Salad with Sriracha Dressing
A healthy and satisfying salad featuring perfectly seared salmon cubes, quinoa, creamy avocado, and a vibrant sriracha-honey dressing for a spicy-sweet kick.
Ingredients
For the Salad:
- 1/2 cup (100g) quinoa and brown rice mix
- 1/2 lb (200g) salmon, cubed
- 1/2 cucumber, grated
- 1 carrot, grated
- 1 avocado, diced
- 2 cups (50g) baby spinach
For the Dressing:
- 1 tbsp sriracha sauce
- Juice of 1 lemon
- 1 tbsp honey
- 1 tbsp olive oil
- 1 tbsp white sesame seeds
- 1 tbsp black sesame seeds
- Salt and pepper
Instructions
- Cook the quinoa/rice mix according to package directions. Let it cool.
- Season the salmon cubes with salt, pepper, and lemon juice. Sear the salmon in a hot pan with oil for 2-3 minutes until golden brown.
- In a large bowl, combine the cooled quinoa, grated cucumber and carrots, diced avocado, and baby spinach.
- In a small bowl, whisk together all dressing ingredients.
- Assemble the salad by topping the quinoa-vegetable mix with the seared salmon cubes and drizzling with the dressing.
