Grilled Pineapple BBQ Tofu Skewers
A perfect summer meal, these skewers feature tofu sticks glazed in BBQ sauce and grilled alongside sweet pineapple and fresh vegetables, all served over quinoa.
Ingredients
- 1/2 cup (85g) uncooked quinoa
- 1 tbsp olive oil
- 1/2 zucchini, chopped
- 1/2 red onion, chopped
- 1 bell pepper, chopped
- 6 oz (170g) extra firm tofu, pressed and cut into sticks
- 1/4 cup (60ml) barbecue sauce
- 4 pineapple rings
Instructions
- Press the tofu for at least 30 minutes to remove excess liquid, then cut into sticks.
- Cook the quinoa according to package directions.
- Preheat a grill to medium-high heat. Toss the chopped vegetables in olive oil, salt and pepper.
- Grill the vegetables on a grill plate for 8-10 minutes. Grill the pineapple rings for 2-3 minutes per side.
- Grill the tofu sticks for 3-4 minutes per side, brushing with barbecue sauce several times while cooking.
- Serve the grilled tofu, pineapple, and vegetables over the cooked quinoa, drizzling with extra BBQ sauce.
