Baked Feta and Zucchini Pasta

A viral trend for a reason, this incredibly easy dish involves baking a block of feta with zucchini, leeks, and chili until creamy, then tossing it with shell pasta.

Ingredients

  • 9 oz (250g) shell pasta
  • 7 oz (200g) block of feta cheese
  • 1 medium zucchini, diced
  • 2 garlic cloves, minced
  • 1/2 leek, thinly sliced
  • 1 red chili, thinly sliced
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, place the block of feta in the center. Arrange the zucchini, garlic, and leek around it. Sprinkle with chili, drizzle with olive oil, and season.
  3. Bake for 25-30 minutes, until vegetables are tender and the feta is soft.
  4. While it bakes, cook the shell pasta until al dente. Reserve 1/2 cup (120ml) of pasta water, then drain.
  5. Remove the dish from the oven. Mash the feta and mix it with the vegetables to create a creamy sauce.
  6. Add the cooked pasta to the baking dish and mix everything together, adding pasta water if the sauce is too thick.
