Baked Feta and Zucchini Pasta
A viral trend for a reason, this incredibly easy dish involves baking a block of feta with zucchini, leeks, and chili until creamy, then tossing it with shell pasta.
Ingredients
- 9 oz (250g) shell pasta
- 7 oz (200g) block of feta cheese
- 1 medium zucchini, diced
- 2 garlic cloves, minced
- 1/2 leek, thinly sliced
- 1 red chili, thinly sliced
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a baking dish, place the block of feta in the center. Arrange the zucchini, garlic, and leek around it. Sprinkle with chili, drizzle with olive oil, and season.
- Bake for 25-30 minutes, until vegetables are tender and the feta is soft.
- While it bakes, cook the shell pasta until al dente. Reserve 1/2 cup (120ml) of pasta water, then drain.
- Remove the dish from the oven. Mash the feta and mix it with the vegetables to create a creamy sauce.
- Add the cooked pasta to the baking dish and mix everything together, adding pasta water if the sauce is too thick.
