Pesto Shrimp Pasta with Broccoli and Tomatoes
A quick, healthy, and flavorful skillet meal, this recipe tosses tender pasta and seasoned shrimp with broccoli, cherry tomatoes, and aromatic pesto.
Ingredients
- 4 oz (115g) pasta (linguine or tagliatelle)
- 1/2 lb (225g) shrimp, peeled
- 2 tbsp olive oil
- 1 cup (85g) broccoli florets
- 1 cup (150g) cherry tomatoes, halved
- 2 tbsp pesto
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Season the shrimp with salt and pepper.
- Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and cooked through. Remove from skillet.
- In the same skillet, sauté the broccoli for 3-4 minutes until tender. Add the cherry tomatoes and sauté for another 2-3 minutes until softened.
- Return the shrimp to the skillet. Add the cooked pasta and pesto, and stir until everything is combined and heated through.
