Pesto Shrimp Pasta with Broccoli and Tomatoes

A quick, healthy, and flavorful skillet meal, this recipe tosses tender pasta and seasoned shrimp with broccoli, cherry tomatoes, and aromatic pesto.

Ingredients

  • 4 oz (115g) pasta (linguine or tagliatelle)
  • 1/2 lb (225g) shrimp, peeled
  • 2 tbsp olive oil
  • 1 cup (85g) broccoli florets
  • 1 cup (150g) cherry tomatoes, halved
  • 2 tbsp pesto
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Season the shrimp with salt and pepper.
  3. Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and cooked through. Remove from skillet.
  4. In the same skillet, sauté the broccoli for 3-4 minutes until tender. Add the cherry tomatoes and sauté for another 2-3 minutes until softened.
  5. Return the shrimp to the skillet. Add the cooked pasta and pesto, and stir until everything is combined and heated through.
