Easy Skillet Salmon with Rice and Vegetables
A complete and balanced meal made in one skillet. This recipe features a perfectly pan-seared salmon fillet served with sautéed broccoli, mushrooms, and a side of rice.
Ingredients
- 1 salmon fillet
- 1 tbsp olive oil
- 1/2 tsp dried thyme
- 1/2 tsp paprika
- 1/2 cup (45g) broccoli florets
- 1/4 cup (25g) sliced mushrooms
- 1/2 cup (95g) cooked rice
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Season the salmon fillet with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Place the salmon skin-side down and cook for 3-4 minutes until the skin is crispy. Flip and cook for another 3-4 minutes until cooked to your liking. Remove from skillet.
- In the same skillet, sauté the broccoli florets with thyme and paprika until tender, about 5-7 minutes. Remove from skillet.
- In the same skillet, sauté the sliced mushrooms until tender and lightly browned, about 5 minutes.
- Serve the salmon fillet alongside the cooked rice, sautéed broccoli, and mushrooms, with lemon wedges on the side.
