Refreshing Bulgur Salad with Pomegranate and Feta

A light yet satisfying salad that's bursting with fresh flavors. It combines hearty bulgur with crisp cucumber, juicy pomegranate seeds, and salty feta in a simple lemon dressing.

Ingredients

  • 1/2 cup (85g) bulgur
  • 1/2 cucumber, diced
  • 3 small spring onions, finely chopped
  • 1 handful (about 1 cup / 30g) baby spinach
  • Seeds from 1/2 pomegranate
  • Juice of 1/2 lemon
  • 3.5 oz (100g) feta, crumbled
  • Dash of olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the bulgur according to package instructions and allow it to cool slightly.
  2. While the bulgur cooks, prepare the remaining ingredients: dice the cucumber, chop the spring onions and spinach, and deseed the pomegranate.
  3. In a large bowl, combine the cooled bulgur with the cucumber, spring onions, spinach, pomegranate seeds, and crumbled feta.
  4. Drizzle with lemon juice and olive oil. Season with salt and pepper and toss to combine.
