Fresh Vegetarian Summer Rolls with Hoisin Sauce
Light, healthy, and refreshing, these vegetarian summer rolls are filled with crispy tofu, julienned carrots, cucumber, and fresh herbs, served with a savory hoisin dipping sauce.
Ingredients
- 2 rice paper wrappers
- 3.5 oz (100g) firm tofu, cut into thin strips
- 1/2 large carrot, julienned
- 1/2 cucumber, julienned
- Fresh mint or basil leaves
- 1/2 tbsp soy sauce (for tofu marinade)
- 1/2 tbsp olive oil (for cooking)
- 2 tbsp hoisin sauce (for dipping)
Instructions
- Marinate the tofu strips in soy sauce for about 10 minutes.
- Cook the tofu: Heat olive oil in a pan and cook the tofu strips until golden and slightly crispy. Let them cool.
- Soften the rice paper: Fill a large bowl with warm water. Dip one wrapper for 10-15 seconds until pliable, then lay it flat.
- Assemble the rolls: Place tofu, carrot, cucumber, and fresh herbs in the center of the rice paper. Fold the sides over the filling, then roll it up tightly.
- Repeat with the remaining wrapper and serve with hoisin sauce for dipping.
