Ingredients

Burrata Salad with Pear:

  • 1 cup (30g) fresh arugula
  • 1 ripe pear, thinly sliced
  • 1 ball of burrata cheese, torn
  • 1/4 cup (30g) walnuts, chopped
  • Balsamic vinegar

Burrata Salad with Apricot & Berries:

  • 1 cup (30g) fresh arugula
  • 1 ripe apricot, thinly sliced
  • 1 ball of burrata cheese, torn
  • 1/4 cup (30g) pistachios, chopped
  • Handful of blackberries and strawberries

Instructions

For Both Salads:

  1. On a serving platter, arrange a bed of arugula.
  2. Scatter the sliced fruit (pear or apricot) over the arugula.
  3. Tear the burrata cheese into pieces and arrange them on the salad.
  4. Sprinkle with the chopped nuts (walnuts or pistachios) and berries (if using).
  5. Season with salt and freshly ground black pepper to taste and drizzle with balsamic vinegar.
