Honey-Lime Shrimp Bowl

A vibrant and healthy bowl featuring succulent shrimp marinated in a zesty honey-lime mixture, served over brown rice with black beans, avocado, and fresh tomatoes.

Ingredients

For the Shrimp:

  • 1/2 lb (225g) large shrimp, peeled and deveined
  • 1 tbsp canola oil
  • 2 tbsp fresh lime juice
  • 1 clove garlic, pressed
  • 1 tsp honey
  • 1/2 tsp ground cumin
  • Salt and pepper

For the Bowl:

  • 1 cup (185g) cooked brown rice
  • 1/2 can (7 oz / 200g) black beans, rinsed and warmed
  • 1/2 cup (75g) cherry tomatoes, sliced
  • 1/2 large avocado, chopped

Instructions

  1. In a bowl, marinate the shrimp with 1 tbsp oil, lime juice, garlic, honey, cumin, salt, and pepper. Let it rest for 15 minutes.
  2. Heat a large skillet over medium-high heat. Add the shrimp in a single layer.
  3. Cook the shrimp for 1-2 minutes on each side, until they've turned pink and are cooked through.
  4. Assemble the bowls by starting with a base of brown rice, then adding the black beans, cherry tomatoes, avocado, and topping with the cooked shrimp.
