Honey-Lime Shrimp Bowl
A vibrant and healthy bowl featuring succulent shrimp marinated in a zesty honey-lime mixture, served over brown rice with black beans, avocado, and fresh tomatoes.
Ingredients
For the Shrimp:
- 1/2 lb (225g) large shrimp, peeled and deveined
- 1 tbsp canola oil
- 2 tbsp fresh lime juice
- 1 clove garlic, pressed
- 1 tsp honey
- 1/2 tsp ground cumin
- Salt and pepper
For the Bowl:
- 1 cup (185g) cooked brown rice
- 1/2 can (7 oz / 200g) black beans, rinsed and warmed
- 1/2 cup (75g) cherry tomatoes, sliced
- 1/2 large avocado, chopped
Instructions
- In a bowl, marinate the shrimp with 1 tbsp oil, lime juice, garlic, honey, cumin, salt, and pepper. Let it rest for 15 minutes.
- Heat a large skillet over medium-high heat. Add the shrimp in a single layer.
- Cook the shrimp for 1-2 minutes on each side, until they've turned pink and are cooked through.
- Assemble the bowls by starting with a base of brown rice, then adding the black beans, cherry tomatoes, avocado, and topping with the cooked shrimp.
