Greek Yogurt Marinated Grilled Chicken Skewers
Tender, juicy, and packed with flavor, these chicken skewers are marinated in a zesty mixture of Greek yogurt, lemon, and herbs before being grilled to perfection.
Ingredients
- 1/2 cup (120g) plain Greek yogurt
- 1 tbsp avocado or olive oil
- Juice of 1/2 large fresh lemon
- 1 tsp ground cumin
- 1 tsp dried oregano
- 3/4 lb (340g) boneless, skinless chicken, cut into bite-sized pieces
- Salt and pepper to taste
To Serve:
- Sliced cucumber, cherry tomatoes, red onion, green olives
Instructions
- In a large bowl, combine the marinade ingredients: yogurt, oil, lemon juice, cumin, oregano, salt, and pepper.
- Add the chicken pieces and stir to coat completely. Cover and refrigerate for at least 1 hour.
- Preheat an indoor grill pan or outdoor grill over medium heat.
- Thread the marinated chicken pieces onto bamboo skewers.
- Grill the chicken skewers until cooked through (165°F / 75°C) and nicely charred, about 3-5 minutes per side.
- Serve with a side of fresh vegetables.
