Creamy Chicken Noodle Soup with Spinach

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 carrot, diced
  • 1 parsnip, diced
  • 1 cup (140g) cooked, shredded chicken
  • 2 cups (475ml) chicken broth
  • 1/2 cup (120ml) heavy cream
  • 1 tbsp cream cheese
  • 1/2 cup (55g) cheddar cheese, shredded
  • 1/2 cup (60g) small pasta
  • 1 cup (30g) fresh spinach

Instructions

  1. Heat olive oil in a large pot. Sauté the onion, carrot, and parsnip for 4-5 minutes until softened.
  2. Stir in the shredded chicken and pour in the chicken broth. Bring to a boil.
  3. Lower heat to a simmer. Stir in the heavy cream, cream cheese, and cheddar cheese until fully melted and creamy.
  4. Add the pasta and cook according to package instructions, until tender.
  5. Stir in the spinach and cook for another 2-3 minutes, until wilted. Season with salt and pepper.
