Creamy Chicken Noodle Soup with Spinach
The ultimate comfort food, this soup is a rich and creamy take on classic chicken noodle, loaded with tender chicken, pasta, vegetables, and finished with spinach and cheese.
Ingredients
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 1 carrot, diced
- 1 parsnip, diced
- 1 cup (140g) cooked, shredded chicken
- 2 cups (475ml) chicken broth
- 1/2 cup (120ml) heavy cream
- 1 tbsp cream cheese
- 1/2 cup (55g) cheddar cheese, shredded
- 1/2 cup (60g) small pasta
- 1 cup (30g) fresh spinach
Instructions
- Heat olive oil in a large pot. Sauté the onion, carrot, and parsnip for 4-5 minutes until softened.
- Stir in the shredded chicken and pour in the chicken broth. Bring to a boil.
- Lower heat to a simmer. Stir in the heavy cream, cream cheese, and cheddar cheese until fully melted and creamy.
- Add the pasta and cook according to package instructions, until tender.
- Stir in the spinach and cook for another 2-3 minutes, until wilted. Season with salt and pepper.
