Garlic Butter Chicken Meatballs with Cauliflower Rice
A delicious low-carb meal featuring tender, cheesy chicken meatballs cooked in a rich garlic butter sauce and served over a bed of fluffy cauliflower rice.
Ingredients
For the Chicken Meatballs:
- 1/2 lb (225g) ground chicken
- 1/2 cup (55g) shredded cheese
- 1 clove garlic, grated
- 1 tsp Italian seasoning
- 1/2 cup (20g) fresh chopped parsley
- Salt and pepper to taste
For the Sauce & Cauliflower Rice:
- 1 medium head of cauliflower, grated
- 3 tbsp butter, divided
- 1 clove garlic, minced
- 1/2 cup (120ml) chicken stock
- Juice of 1/2 lemon
- 1 tbsp hot sauce
Instructions
- In a large bowl, combine the meatball ingredients: ground chicken, cheese, grated garlic, seasoning, parsley, salt, and pepper. Mix and form into medium-sized balls.
- Heat 2 tbsp of butter in a large skillet. Cook the chicken meatballs for 8-10 minutes, turning, until browned and cooked through. Remove from skillet.
- In the same skillet, melt the remaining 1 tbsp of butter. Sauté the minced garlic until fragrant.
- Pour in the chicken stock, lemon juice, and hot sauce. Stir and let it simmer for a couple of minutes.
- Add the cauliflower rice to the skillet and toss with the sauce until heated through.
- Serve the cauliflower rice with the cooked chicken meatballs on top.
