Garlic Butter Chicken Meatballs with Cauliflower Rice

A delicious low-carb meal featuring tender, cheesy chicken meatballs cooked in a rich garlic butter sauce and served over a bed of fluffy cauliflower rice.

Ingredients

For the Chicken Meatballs:

  • 1/2 lb (225g) ground chicken
  • 1/2 cup (55g) shredded cheese
  • 1 clove garlic, grated
  • 1 tsp Italian seasoning
  • 1/2 cup (20g) fresh chopped parsley
  • Salt and pepper to taste

For the Sauce & Cauliflower Rice:

  • 1 medium head of cauliflower, grated
  • 3 tbsp butter, divided
  • 1 clove garlic, minced
  • 1/2 cup (120ml) chicken stock
  • Juice of 1/2 lemon
  • 1 tbsp hot sauce

Instructions

  1. In a large bowl, combine the meatball ingredients: ground chicken, cheese, grated garlic, seasoning, parsley, salt, and pepper. Mix and form into medium-sized balls.
  2. Heat 2 tbsp of butter in a large skillet. Cook the chicken meatballs for 8-10 minutes, turning, until browned and cooked through. Remove from skillet.
  3. In the same skillet, melt the remaining 1 tbsp of butter. Sauté the minced garlic until fragrant.
  4. Pour in the chicken stock, lemon juice, and hot sauce. Stir and let it simmer for a couple of minutes.
  5. Add the cauliflower rice to the skillet and toss with the sauce until heated through.
  6. Serve the cauliflower rice with the cooked chicken meatballs on top.
