Easy Teriyaki Chicken Bowl
A simple, healthy, and satisfying meal, this bowl features tender chicken in a classic homemade teriyaki sauce, served with brown rice, edamame, and fresh greens.
Ingredients
For the Teriyaki Sauce:
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp honey or maple syrup
- 1 tsp grated ginger
- 1 tsp minced garlic
For the Bowl:
- 1/2 lb (225g) boneless, skinless chicken breast, thinly sliced
- 1 tsp vegetable oil
- 1/2 cup (95g) brown rice
- 1 cup (150g) frozen edamame, thawed
- 1 cup (30g) mixed salad greens
Instructions
- Cook the brown rice and steam the edamame according to package instructions.
- In a bowl, whisk the sauce ingredients: soy sauce, mirin, honey, ginger, and garlic.
- Heat vegetable oil in a pan over medium heat. Cook the chicken breast until browned and cooked through.
- Pour the teriyaki sauce over the chicken, stirring to coat. Simmer for 2-3 minutes until the sauce thickens.
- Assemble the bowls with the brown rice, salad greens, edamame, and top with the teriyaki chicken.
