Easy Teriyaki Chicken Bowl

A simple, healthy, and satisfying meal, this bowl features tender chicken in a classic homemade teriyaki sauce, served with brown rice, edamame, and fresh greens.

Ingredients

For the Teriyaki Sauce:

  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp honey or maple syrup
  • 1 tsp grated ginger
  • 1 tsp minced garlic

For the Bowl:

  • 1/2 lb (225g) boneless, skinless chicken breast, thinly sliced
  • 1 tsp vegetable oil
  • 1/2 cup (95g) brown rice
  • 1 cup (150g) frozen edamame, thawed
  • 1 cup (30g) mixed salad greens

Instructions

  1. Cook the brown rice and steam the edamame according to package instructions.
  2. In a bowl, whisk the sauce ingredients: soy sauce, mirin, honey, ginger, and garlic.
  3. Heat vegetable oil in a pan over medium heat. Cook the chicken breast until browned and cooked through.
  4. Pour the teriyaki sauce over the chicken, stirring to coat. Simmer for 2-3 minutes until the sauce thickens.
  5. Assemble the bowls with the brown rice, salad greens, edamame, and top with the teriyaki chicken.
