Fluffy Chocolate Pancakes

Ingredients

  • 1 cup (120g) all-purpose flour
  • 1/4 cup (25g) cocoa powder
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup (240ml) milk
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together the dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the wet ingredients: milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry and stir until just combined. Do not overmix; a few lumps are okay.
  4. Heat a lightly greased griddle or non-stick skillet over medium heat.
  5. Pour 1/4 cup (60ml) of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until cooked through.
