Creamy Chicken, Corn, and Bacon Pasta
A comforting and satisfying pasta dish that has it all: tender chicken, crispy bacon, sweet corn, and a creamy, cheesy sauce made lighter with Greek yogurt.
Ingredients
- 4 oz (115g) whole-grain pasta
- 1 chicken breast, cooked and shredded
- 2 slices turkey bacon, chopped
- 1 cup (150g) corn kernels
- 1 cup (150g) cherry tomatoes, halved
- 1/2 cup (70g) peas
- 1/2 cup (120g) Greek yogurt
- 1/2 cup (120ml) chicken broth
- 1/4 cup (25g) grated Parmesan cheese
- 1 tsp dried Italian herbs
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, cook the chopped turkey bacon until crispy. Add the shredded chicken and heat through.
- Add corn, cherry tomatoes, and peas to the skillet. Cook for a few minutes until the vegetables are tender.
- In a bowl, whisk together the sauce: Greek yogurt, chicken broth, Parmesan cheese, and Italian herbs.
- Pour the creamy sauce over the chicken and vegetable mixture. Stir well to combine and heat through. Season with salt and pepper.
- Add the cooked pasta to the skillet and toss everything together until the pasta is well coated.
