Creamy Chicken, Corn, and Bacon Pasta

A comforting and satisfying pasta dish that has it all: tender chicken, crispy bacon, sweet corn, and a creamy, cheesy sauce made lighter with Greek yogurt.

Ingredients

  • 4 oz (115g) whole-grain pasta
  • 1 chicken breast, cooked and shredded
  • 2 slices turkey bacon, chopped
  • 1 cup (150g) corn kernels
  • 1 cup (150g) cherry tomatoes, halved
  • 1/2 cup (70g) peas
  • 1/2 cup (120g) Greek yogurt
  • 1/2 cup (120ml) chicken broth
  • 1/4 cup (25g) grated Parmesan cheese
  • 1 tsp dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, cook the chopped turkey bacon until crispy. Add the shredded chicken and heat through.
  3. Add corn, cherry tomatoes, and peas to the skillet. Cook for a few minutes until the vegetables are tender.
  4. In a bowl, whisk together the sauce: Greek yogurt, chicken broth, Parmesan cheese, and Italian herbs.
  5. Pour the creamy sauce over the chicken and vegetable mixture. Stir well to combine and heat through. Season with salt and pepper.
  6. Add the cooked pasta to the skillet and toss everything together until the pasta is well coated.
