Cheesy Bacon and Egg Breakfast Quesadilla

Start your day with a satisfying crunch. These quesadillas are filled with fluffy scrambled eggs, crispy bacon, and fresh tomatoes, all melted together in a warm tortilla.

Ingredients

  • 1 tbsp olive oil
  • 1 cup (115g) diced bacon
  • 1 cup (150g) chopped cherry tomato
  • 4 large eggs, lightly beaten
  • Salt and black pepper to taste
  • 1 green onion, sliced
  • 4 large tortilla sheets

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Cook the bacon until crisp, then remove and set aside, leaving the fat in the skillet.
  2. Add the beaten eggs to the same skillet and cook, stirring, until they begin to set. Season with salt and pepper.
  3. Continue cooking until the eggs are thickened but still moist, about 3-5 minutes. Stir in the cooked bacon, green onions, and tomatoes.
  4. Assemble the quesadillas by layering the egg mixture on one half of each tortilla. Fold the other half over.
  5. Cook the quesadillas in a clean pan over medium heat with a little oil, frying for 2-3 minutes per side until golden brown and the filling is heated through.
