Cheesy Bacon and Egg Breakfast Quesadilla
Start your day with a satisfying crunch. These quesadillas are filled with fluffy scrambled eggs, crispy bacon, and fresh tomatoes, all melted together in a warm tortilla.
Ingredients
- 1 tbsp olive oil
- 1 cup (115g) diced bacon
- 1 cup (150g) chopped cherry tomato
- 4 large eggs, lightly beaten
- Salt and black pepper to taste
- 1 green onion, sliced
- 4 large tortilla sheets
Instructions
- Heat olive oil in a large skillet over medium-high heat. Cook the bacon until crisp, then remove and set aside, leaving the fat in the skillet.
- Add the beaten eggs to the same skillet and cook, stirring, until they begin to set. Season with salt and pepper.
- Continue cooking until the eggs are thickened but still moist, about 3-5 minutes. Stir in the cooked bacon, green onions, and tomatoes.
- Assemble the quesadillas by layering the egg mixture on one half of each tortilla. Fold the other half over.
- Cook the quesadillas in a clean pan over medium heat with a little oil, frying for 2-3 minutes per side until golden brown and the filling is heated through.
