Simple One-Pot Lentil Pasta
A revolutionary time-saver, this one-pot pasta recipe combines linguine, tomatoes, lentils, and herbs, cooking everything together for a flavorful, easy-to-clean-up meal.
Ingredients
- 12 oz (340g) linguine
- 12 oz (340g) cherry tomatoes, halved
- 1/2 cup (70g) pitted olives, halved
- 1/4 cup (50g) cooked lentils
- 1/2 cup (20g) chopped fresh parsley
- 2 tbsp olive oil
- 4 1/2 cups (1.1 L) water
- Salt and pepper to taste
Instructions
- Combine all ingredients (pasta, tomatoes, olives, lentils, parsley, oil, and water) in a large, straight-sided skillet.
- Bring the mixture to a boil over high heat. Once boiling, stir frequently with tongs to prevent sticking.
- Cook for 10-12 minutes, stirring often, until the pasta is al dente and the water has nearly evaporated, creating a light sauce.
- Season with salt and pepper to taste and top with more fresh parsley before serving.
