Ingredients

  • 2 1/2 cups (300g) all-purpose flour
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground ginger
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar, packed
  • 2 large eggs
  • 1 1/2 cups (355ml) hot water

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, and spices.
  3. In a large bowl, cream together the butter and brown sugar. Beat in the eggs one at a time.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the hot water until the batter is smooth (it will be thin).
  6. Pour the batter into the prepared pan. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
