Moist and Spicy Gingerbread Cake

Ingredients
- 2 1/2 cups (300g) all-purpose flour
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tsp ground ginger
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) brown sugar, packed
- 2 large eggs
- 1 1/2 cups (355ml) hot water
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, and spices.
- In a large bowl, cream together the butter and brown sugar. Beat in the eggs one at a time.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the hot water until the batter is smooth (it will be thin).
- Pour the batter into the prepared pan. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
