Ingredients
- 1 cup (150g) watermelon, cubed
- 1 cup (30g) arugula
- 1/4 cup (30g) feta cheese, crumbled
- 1/4 red onion, thinly sliced
- 1 tbsp fruit vinegar (e.g., raspberry)
- Salt and pepper to taste
For optional Grilled Chicken:
- 1 boneless, skinless chicken breast
- Marinade of olive oil, lemon juice, garlic powder, and oregano
