Honey Sesame Chicken Lunch Bowls
Perfect for meal prep, these lunch bowls feature tender chicken coated in a sweet and savory honey sesame sauce, served with rice and crisp vegetables.
Ingredients
For the Honey Sesame Sauce:
- 2 tbsp chicken stock or water
- 2 tbsp soy sauce
- 2 tbsp honey
- 1/2 tbsp sesame oil
- 1/4 tsp red pepper flakes
- 1/2 tsp cornstarch
For the Bowls:
- 1 cup (185g) cooked rice
- 1 tbsp olive oil
- 1 1/2 cups (130g) broccoli, chopped
- 1 1/2 cups (170g) snap peas
- 1 large chicken breast, cut into cubes
Instructions
- In a small jar, combine all sauce ingredients. Shake well to create the honey sesame sauce.
- In a large pan, heat 1/2 tbsp of olive oil. Sauté the broccoli and snap peas for 5-7 minutes until tender-crisp. Remove from pan.
- In the same pan, heat the remaining oil. Cook the chicken cubes, seasoned with salt and pepper, for 7-10 minutes until cooked through.
- Pour the honey sesame sauce into the pan with the cooked chicken. Simmer for 2 minutes, allowing the sauce to thicken.
- Assemble the lunch bowls by dividing the cooked rice, vegetables, and honey sesame chicken into containers.
