Easy Korean Beef Bowl
Enjoy the rich, savory flavors of a Korean BBQ in a simple, weeknight-friendly ground beef bowl, perfectly balanced with rice, greens, and a soft-boiled egg.
Ingredients
- 1 cup (185g) rice
- 2 large eggs
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 cups (60g) lamb's lettuce or other greens
- 1/4 cup (50g) brown sugar
- 1/4 cup (60ml) reduced-sodium soy sauce
- 1 tbsp freshly grated ginger
- 2 tsp sesame oil
- 1/2 tsp Sriracha
- 1 lb (450g) ground beef
- 1/4 cup (60ml) water
- 2 green onions, thinly sliced
- 1/4 tsp sesame seeds
Instructions
- Cook the rice according to package directions. At the same time, boil the eggs for 8-10 minutes for a firm yolk, then cool and peel.
- In a large pan over medium heat, heat the olive oil. Add the garlic, brown sugar, soy sauce, ginger, sesame oil, and Sriracha, and stir to combine.
- Add the ground beef to the pan. Cook until browned, breaking it apart with a spoon, for about 8-10 minutes. Add the water during cooking to keep it moist.
- To serve, assemble the bowls with a base of rice, topped with the cooked beef mixture, salad greens, and a halved boiled egg.
- Garnish with sliced green onions and sesame seeds. Enjoy!
