Easy Korean Beef Bowl

Enjoy the rich, savory flavors of a Korean BBQ in a simple, weeknight-friendly ground beef bowl, perfectly balanced with rice, greens, and a soft-boiled egg.

Ingredients

  • 1 cup (185g) rice
  • 2 large eggs
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 cups (60g) lamb's lettuce or other greens
  • 1/4 cup (50g) brown sugar
  • 1/4 cup (60ml) reduced-sodium soy sauce
  • 1 tbsp freshly grated ginger
  • 2 tsp sesame oil
  • 1/2 tsp Sriracha
  • 1 lb (450g) ground beef
  • 1/4 cup (60ml) water
  • 2 green onions, thinly sliced
  • 1/4 tsp sesame seeds

Instructions

  1. Cook the rice according to package directions. At the same time, boil the eggs for 8-10 minutes for a firm yolk, then cool and peel.
  2. In a large pan over medium heat, heat the olive oil. Add the garlic, brown sugar, soy sauce, ginger, sesame oil, and Sriracha, and stir to combine.
  3. Add the ground beef to the pan. Cook until browned, breaking it apart with a spoon, for about 8-10 minutes. Add the water during cooking to keep it moist.
  4. To serve, assemble the bowls with a base of rice, topped with the cooked beef mixture, salad greens, and a halved boiled egg.
  5. Garnish with sliced green onions and sesame seeds. Enjoy!
