One-Pan Balsamic Chicken and Asparagus
A quick, easy, and flavorful one-pan meal perfect for a busy weeknight. Tender chicken, asparagus, and tomatoes are cooked together in a delicious balsamic-mustard vinaigrette.
Ingredients
- 1/2 lb (225g) chicken breast
- 1/2 lb (225g) white asparagus, trimmed
- 1/2 pint (about 1 cup / 150g) cherry tomatoes, halved
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/2 tbsp honey
- 1/2 tbsp Dijon mustard
- Pinch of crushed red pepper flakes
- Salt and black pepper
Instructions
- In a small bowl, whisk together the vinaigrette: balsamic vinegar, 1 tbsp olive oil, honey, Dijon mustard, and red pepper flakes.
- Heat the remaining 1 tbsp olive oil in a large skillet over medium heat. Season the chicken with salt and pepper and sear until golden brown, about 3 minutes per side. Remove from pan.
- Add the asparagus and cherry tomatoes to the skillet. Season and cook until the asparagus is tender-crisp, about 5 minutes.
- Return the chicken to the pan. Pour the vinaigrette over everything.
- Toss gently and cook for 5 more minutes, until the chicken is fully cooked (165°F / 75°C) and the vinaigrette has thickened slightly.
