Honey Soy Baked Tofu Bowls
A healthy and flavorful vegetarian meal, these bowls feature crispy oven-baked tofu in a sweet honey-soy marinade, served with brown rice and mixed vegetables.
Ingredients
For the Tofu:
- 1 block (12 oz / 350g) tofu, cubed
- 2 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 1 clove garlic, minced
- 1 tsp ground ginger
- 1 tbsp olive oil
- 1 tbsp cornstarch
For the Bowl:
- 1 cup (185g) brown rice
- 1 cup (150g) corn
- 1 cup (85g) Brussels sprouts
- 1 cup (150g) cherry tomatoes, halved
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, whisk the marinade: soy sauce, honey, garlic, ginger, olive oil, and cornstarch. Add the cubed tofu and toss to coat. Let it marinate for at least 15 minutes.
- Place the tofu on a lined baking sheet. Bake for 20-25 minutes, until golden and crispy.
- While the tofu is baking, cook the brown rice and steam the Brussels sprouts.
- Assemble the bowls with the brown rice, corn, steamed Brussels sprouts, cherry tomatoes, and top with the baked tofu.
