Pan-Seared Salmon with Creamy Lemon Sauce
A restaurant-quality meal at home, this dish features a perfectly pan-seared salmon with a crispy skin, served with homemade fries and a creamy lemon sauce over green vegetables.
Ingredients
For the Fries:
- 1 large potato, cut into thin strips
- 2 tbsp olive oil & salt
For the Salmon and Veggies:
- 1 salmon fillet
- 1 tbsp butter
- 1 garlic clove & 1 sprig rosemary
- 1/2 cup (70g) green peas
- 1/2 cup (50g) green beans
For the Creamy Lemon Sauce:
- 1/2 cup (120ml) heavy cream
- 1 tbsp lemon juice & 1 tsp lemon zest
- Salt and pepper
Instructions
- Preheat oven to 425°F (220°C). Toss potato strips with olive oil and salt, and bake for 25-30 minutes until golden.
- Season the salmon with salt and pepper. In a large skillet, melt the butter over medium-high heat.
- Sear the salmon skin-side down for 4-5 minutes, then flip. Add the garlic and rosemary, and cook for another 4-5 minutes, basting with the butter, until cooked through.
- In a separate skillet, sauté the green peas and beans until tender.
- Make the sauce by combining heavy cream, lemon juice, zest, salt, and pepper. Pour over the vegetables and heat through.
- Serve the salmon with the creamy vegetables and homemade fries.
