Pan-Seared Salmon with Creamy Lemon Sauce

A restaurant-quality meal at home, this dish features a perfectly pan-seared salmon with a crispy skin, served with homemade fries and a creamy lemon sauce over green vegetables.

Ingredients

For the Fries:

  • 1 large potato, cut into thin strips
  • 2 tbsp olive oil & salt

For the Salmon and Veggies:

  • 1 salmon fillet
  • 1 tbsp butter
  • 1 garlic clove & 1 sprig rosemary
  • 1/2 cup (70g) green peas
  • 1/2 cup (50g) green beans

For the Creamy Lemon Sauce:

  • 1/2 cup (120ml) heavy cream
  • 1 tbsp lemon juice & 1 tsp lemon zest
  • Salt and pepper

Instructions

  1. Preheat oven to 425°F (220°C). Toss potato strips with olive oil and salt, and bake for 25-30 minutes until golden.
  2. Season the salmon with salt and pepper. In a large skillet, melt the butter over medium-high heat.
  3. Sear the salmon skin-side down for 4-5 minutes, then flip. Add the garlic and rosemary, and cook for another 4-5 minutes, basting with the butter, until cooked through.
  4. In a separate skillet, sauté the green peas and beans until tender.
  5. Make the sauce by combining heavy cream, lemon juice, zest, salt, and pepper. Pour over the vegetables and heat through.
  6. Serve the salmon with the creamy vegetables and homemade fries.
